Pasta and greens with Caesar Chavez Dressing
Whole wheat pasta is my easy meal when we play too long at the park. Last night was whole wheat gobetti, spinach, asparagus, green beans, and edamame with Caesar Chavez Dressing from Appetite for Reduction. Rob felt the dressing was too simple and wants to play with it, but I found it light and refreshing and the kids gobbled it up.
Muesli and stone fruit
I am on a muesli kick right now. I could eat it for every meal. The kids prefer granola so they've started calling the muesli "healthy cereal". Usually healthy is not a negative, but I'm pretty sure in this case they are not giving the muesli a compliment. I add extra dried fruit (this morning it was cherries) and the kids add frozen blueberries as well. We all agree on the stone fruit. Lots of nectarines, peaches, white nectarines, etc. being consumed in our house right now. The white nectarines on the left of the picture above were especially delicious. We bought ours at Common Ground Co-op and need to go back more.
Chick'n Parm Pasta
I love tomato season. Pick the tomatoes, cook them down with all the veggies I can find in the house, make a soup or soup, enjoy, rinse and repeat. This sauce has garlic, white wine, red onion, garden tomatoes, garden red chiles, jarred hot peppers, raw cashews, oregano, thyme, rosemary, parsley, kalamata olives, tomato paste, carrots, red miso, and fresh black pepper on top. Now that Rob is working at an office again, it is cool enough for me to actually cook for lunch. Today's lunch (and dinner for some of us) was whole wheat spaghetti, sauce of the day, Gardein Chick'n Patty, and Lisanatti shredded vegan mozzarella. Josie ate three bowls and the boys ate a serving or two with baked tofu sandwiches. Summer fun makes their appetites huge.
