Picnic-Indian Fusion

Thanks to Rachel, last night's dinner was picnic-Indian fusion food.
Samosa Potato Salad and Field Roast Frankfurter's with more Trader Joe's Mango Ginger Chutney (to continue the Indian theme, actually quite good on a hot dog), avocado, and lettuce on a whole wheat bun. I made the potato salad early in the day which I highly recommend because the longer is sits in the refrigerator the better it gets. When I saw this recipe I knew I had to make it for Rob, then what do I do? I make it as soon as he leaves town. In my defense, we hardly ever have white potatoes on hand and he bought some this weekend before he left. I didn't have frozen peas so I added a veggie blend of peas, corn, carrots, and green beans (worked well). I also didn't have cilantro which would make it even better. Another prefect summer dinner before playing at the park with friends and taking care of all the animals we are helping out with this week (dogs, cats, fish, and plants...oh my!).

It was darn good, but I think mango ginger chutney could be tasty on almost anything.
