Coffee Cake and Skillet-Baked Panko Cutlets

East Coast Coffee Cake from Vegan Brunch 
I add shredded coconut to the topping, use white whole wheat flour, and frozen blueberries in the filling. I've made this a couple times in the last week or so. Most of the time I double the recipe since we usually are sharing with kids who are sleeping over or neighbor kids who come by during the day. It is something I can throw together at night when it is cooler in the kitchen and have for breakfast in the morning.

We've really enjoyed everything I've made from Vegan Diner. The base for this dish is Italian Sausage Cutlets. Julie Hasson says to form the seitan into cutlets before steaming, but I found it much easier to just steam as a loaf and cut into cutlet size pieces after steaming. I ended up with more cutlets that way. All of her seitan recipes are so good you end up eating the seitan right out of the steamer if you don't stop yourself. I used Daiya's Pepperjack Style Shreds which are now available at Common Ground Co-op. Rob has never been a big fan of any vegan cheeses, but he ate a handful of the Pepperjack right out of the package. It melted wonderfully when broiled for about four minutes. I served it with a mixed greens salad and Common Ground's homemade bottled dressing and sunflower seeds. The dressing was good, but we'll stick to making our own, just so easy and cheaper. We had leftovers when Loretta's kids were staying for a sleepover and I served it over star pasta because we had a lot of sauce. The kids ate it up.

That coffee cake looks so yummy! Seth made one on Saturday that sounded so similar to this one, but no blueberries. Have to suggest them to him. He's the coffee cake guy in our house.

I can't make anything without putting fruit or veggies in it. :-) I've made the coffee cake loads of times, but the shredded coconut really changes the flavor and goes great with blueberries.

Hi, I just found your blog and I am so excited. I live in CU. I became a vegetarian 3 1/2 years ago and became vegan in February of this year. :)

I am the only vegetarian/vegan in my family, and I only have a couple of friends who are vegetarian (none vegan yet, although I am making some progress with a couple of family members)

I am a member of the coop, and I also shop at Strawberry Fields and the farmer's market. Although I have met some wonderful people, I haven't really connected with other vegans. I did go to a potluck about the coop expansion, and that was nice, but I would love to know more about vegan meet ups in the area. It would be fun to be able to cook for people who would be excited to eat vegan food, plus it would be nice to try things other that what I make myself or buy. :) Also, I didn't know if your buying club is open to new members. I am always looking for ways to save money and still get quality ingredients.

I hope I don't seem overzealous. I have been looking for ways to connect with others who share some of my views. Although some of my family is very supportive, they still don't quite get it yet.

I also didn't realize we have a local radio show that talks about this stuff. I am eager to check it out. Way to make a difference!
