Super Quick Tomato Basil Cream Pasta or VeganMoFo Day 18

We were playing at the park Monday afternoon and our neighbor Vicky was gardening. She asked if we wanted any herbs because she was cutting hers back in order to take them inside. I was happy to take some off her hands and ended up with an arm-full of wonderful herbs. As the day progressed, we received tomatoes from two more neighbors (Margie and Deborah) so dinner materialized right before my eyes...Super Quick Tomato Basil Cream Pasta.
I've blogged about this dish several times before so what are you waiting for? This might be your last chance to have fresh tomatoes and basil for several months. Why should you eat basil? Did you know basil has Protein, Vitamin E, Riboflavin, Niacin, Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Folate, Calcium, Iron, Magnesium, Phosphorus, Potassium, Zinc, Copper, and Manganese (nutritional analysis here)? Basil comes in a lot of different varieties, is easy to grow (even inside), and tastes great. I used two different types of basil in this dish. Josie likes to eat the basil leaves right off the plant. The kids like this dish, especially Josie, she gives it a lick smacking endorsement.

Hi Linda, I just found your blog and love it. I just read your entire Mofo posts. I am sure I will go back and read more. Your family sounds wonderful. Thanks to your posts I have a few dates with my Eat Drink and be Vegan cookbook. I have to try those chickpea patties. I agree with you that the Vcon were a bit chewy, but grew on you the next day. I alos have to try the Esme sauce. Yum!!!
