Asparagus Potato Soup

We ate two pounds of asparagus yesterday and had a pound left so I thought to myself, I'll just make a vegan quiche because that is the amazing woman that I am. Then I lived my life and ended up making this Asparagus Potato Soup from Veganomicon. Don't be too disappointed for us because it was good, hit the spot, and fit into my day much better. I had more potatoes to use up and I was craving those soups with the swirl of vegan creamy something in the middle so I used the No-Cook Hollandaise with a sprinkling of leftover pistachios to top it all off and dipped some crusty bread from a local bakery in it and called it dinner. It all fell together nicely and I didn't have to go to the store for anything so a happy ending if not the beautiful vegan quiche I originally envisioned.Since I can not make green soups look good with my camera, I will leave you with a picture of Josie on our porch. She is in the outfit our neighbor, Margie, bought for her with a fittingly sprout green bamboo shirt underneath. She matches the soup (and I have to add the soup is very baby friendly since I immersion blended the heck out of it and she enjoyed it). I hope pictures of cute babies make up for yummy, but extremely simple and not so photogenic food.

I think your soup looks delicious. We ate ourselves silly with asparagus last month so I don't think we'll making this anytime soon but as soon as the craving is back watch out! This will definitely be on the menu.

VV, we missed the farmer's market this weekend, but my sister said there was red asparagus. I thought we might have overdone the asparagus too for a while, but red asparagus sounds fun. BTW, I'm so glad to see you back!
